* GF Digestive Biscuits – 1 packets (160g)
* Unsalted Butter – 50g melted
* Mangoes – 2 medium
* Cream Cheese – 300g
* Icing Sugar – 70g
* Whipping Cream – 200ml
* Sugar – 2-3 tbsp
* Corn Flour – 1 tbsp

1. Add biscuits in a grinder and grind.
2. Add melted butter to biscuit crumbs and mix.
3. Add biscuits mix to lined tin and press down with the back of a spoon.
4. Refrigerate while making filling.
5. Blend pulp of mangoes to make puree and keep aside.
6. Add cream cheese and icing sugar and beat until smooth.
7. Add in half mango puree and whisk until well combined.
8. Add whipping cream and beat for 5-6 minutes.
9. Add cream cheese mixture onto biscuit layer in tin and smooth out.
10. Refrigerate over night.
11. In a pan add remaining mango puree, sugar snd corn flour. Cook on low flame for 4-5 minutes to make glaze.
12. Take cheesecake out of freezer and use hot towel to loosen sides of tin.
13. Transfer cheesecake to a plate.
14. Spread mango glaze on top and garnish with mango chunks, cherries and mint leaves.
