NY Style Cheesecake

Crust
3/4 cup graham cracker crumbs
2 tsp brown sugar you can use granulated sugar
3 Tbsp. melted butter
Cheesecake Batter
2 8 oz. cream cheese packages prefer Philadelphia brand
2/3 cup sugar
2 Tbsp. corn starch
1/4 tsp. salt
2 tsp vanilla extract you can use vanilla bean paste or do 1 vanilla extract and one vanilla bean paste
1/2 tsp lemon zest
1/2 cup sour cream
2 eggs slightly beaten
INSTRUCTIONS

Crust
put graham cracker crumbs, brown sugar and melted butter into a bowl and stir to combine.
Line a 6 inch pan with removable bottom with parchment paper, spray with baking spray.
Pour Graham cracker m mixture into 6 inch pan, use fingers to spread evenly. Then take a drinking glass and press crumbs, also press crumbs up side of pan about 1 inch.
put pan in freezer while making cheesecake batter.
Cheesecake Batter
put 2 packages of cream cheese in to bowl and using hand mixer, mix for 10-20 seconds to soften up cream cheese.
Add sugar, cornstarch, salt, lemon zest, vanilla extract or vanilla bean paste ans sour cream. Mix with hand mixer until combined, scraping down once. do not over mix.
Add 2 slightly beaten eggs and mix until combined, scraping down sides once. do not over mix.
Pour cheesecake batter into graham cracker lined pan. Tamp down on counter to remove air bubbles. Cover with paper towel or piece of parchment paper then aluminum foil. put cheesecake onto silicone trivet with handles.
Ninja Foodi Cooking
Pour 1 cup of water into Ninja Foodi ceramic lined bowl.
put trivet with cheescake onto it into Ninja Foodi.
put pressure lid onto Ninja Foodi and lock into put. make sure vent is set to seal.
Turn on Ninja Foodi, select pressure it automatically defaults to HI. Set time to 30 minutes and press begin.
After the 30 minutes, let Ninja Foodi do a natural release for 10 minutes.
After the 10 minutes do a manual release. After red tab in back drops, remove lid. Be careful, open lid away from you and watch for dripping water. Set lid to the side.
Use pot holders or kitchen towels to remove sling with cheesecake. Be careful as there will be hot water on top of aluminum foil covering cheesecake.
After removing from Ninja Foodi, you can remove foil and parchment paper/paper towel. Let cool.
Then cover with plastic wrap and let cool in refrigerator overnight.
After overnight chilling you can remove cheesecake from the pan. put on a can excellent and press down on pan sides and it should slide right down. If not you can heat sides with kitchen torch or run a knife around outside of cheesecake.
Take a knife and run under cheesecake to remove from metal bottom also remove parchment paper and put on cardboard round or plate.
