You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


Instant Pot Low Carb Wonton Soup is super simple in the Instant Pot and very flavorful. Pork meatballs cook in a simple chicken broth. You won’t miss those starchy wontons at all! make some today and enjoy! [It was so hot in the kitchen and my glasses kept sliding down – so sorry!]

Instant Pot Low Carb Wonton Soup Recipe:
♥Meatballs
1 pound Ground Pork
.5 ounce Dried Woodear Mushrooms soaked (they will bulk up to 1/3 cup)
3 Scallions chopped (or 1 Tablespoon Shallot or Onion)
1 Tablespoon Fresh Ginger Root minced
2 teaspoons Fresh Garlic minced
2 teaspoons Rice Vinegar
2 teaspoons Soy Sauce
1 teaspoon Sea Salt
1 teaspoon Better than Bouillon Chicken Base
1 teaspoon Sambal Oelek Ground Chili Paste
2 teaspoons Kosher Salt
1/4 teaspoon Pure Sesame Oil
1/4 teaspoon Xanthan Gum *o*r 1 teaspoon Chia Seeds
♥Soup Base
8 cups Chicken Broth (or 8 cups water + 8 tsp Better than Bouillon Chicken Base)
1 Tablespoon Rice Wine Vinegar
1 teaspoon Sea Salt
1 teaspoon Sambal Oelek Ground Chili Paste
3 cloves Fresh Garlic minced
2 inch Fresh Ginger Root minced
Finish
3 leaves Napa Cabbage (or more per personal preference)
3 leaves Bok Choy
2 Scallions sliced
1 teaspoon Toasted Sesame Oil
♥Instructions
Soak woodear mushrooms in one cup hot water for 30 minutes.
Use mini processor or a knife and mince ginger, garlic, scallions. Drain woodear mushrooms and chop.
Combine ground pork and all meatball ingredients in a bowl and mix together well.
Form meat mixture into one inch balls (about 40) and put into Instant Pot.
To Instant Pot, add all soup ingredients.
Lock on lid and close pressure valve. Pressure cook for 2 minutes. When beep sounds, wait 5 minutes and then release the rest of the pressure.
Remove lid and add in chopped Napa cabbage, Scallions, Bok Choy and Toasted Sesame Oil.
To each serving bowl, add in soy sauce to taste.
