8 Cloves Garlic minced
3 big Sweet Potatoes (the white kind) cubed into 1” chunks
4 Tbsp Olive Oil
2 Lbs Italian Sausage

4 tsp Dried Basil
2 tsp Dried Fennel
4-6 Cups Fresh Green Kale (Hard Leaf, roughly chopped)

Salt & Pepper to taste

Red Pepper Flakes to serve
