Plant-Based Creamy Potato Broccoli Soup | Instant Pot Recipe

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Jill shows you how to make a hot, fast and delicious bowl of potato and broccoli soup to be enjoyed on a cold winter’s day. This is a delicious vegan soup which can be enjoyed by all.

1/2 Onion, chopped (or 1 tablespoon dehydrated onion)
3/4 pound fresh broccoli, stalks peeled and roughly chopped. Hold back 1 cup for adding at the stop.
2 big potatoes, roughly chopped
3 cups broth (your choice: chicken, or vegetable)
Season to taste: (I used 3/4 teaspoon salt but we love salt)
1/2 teaspoon pepper

If using fresh onion, saute in a small amount of oil or water-saute
Add all ingredients to the Instant Pot or stove-top pot.

Cover with broth. Cook until tender. (Instant Pot, set “manual” for 12 minutes)

Use a stick blender or a blender (Take care while blending as this is HOT liquid.) Blend until very smooth.

Season to taste.
Add the little bits of fresh broccoli.
Keep on low for approximately 30 minutes until broccoli is tender. Serve with fresh bread or oyster crackers, etc.
