"R" Recipes : big Family Taco Soup in the Instant Pot



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


We got 2 full meals from this.

Day 1 we ate as soup with cornbread muffins.
Day 2 we ate served over rice, very yummy and filling.

Ingredients:

3lbs gound beef
3/4 cup chopped onion
salt and pepper to taste
30 oz tomato sauce
30 oz pinto beans, drained and rinsed
15 oz chopped tomatoes
15 oz rotel tomatoes and green chiles
15 oz black beans, drained and rinsed
1 lbs bag frozen corn
1 package ranch dressing mix
3 TBSP taco seasoning
2 cups water, 1.5 if you want a thicker soup.

Directions:

Saute onions in Instant Pot and add hamburger, brown. Drain. Add in dry ingredients and tomato sauce. Add all other ingredients. Lock lid and set to manual or soup for 10 minutes. You can serve immediately or keep on stay warm till ready to serve. This soup freezes well.

Serves 14-16 people.
