Reimagining Coleslaw: A Journey to the Perfect Recipe



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


A no mayo (non-mayo based) coleslaw for people who despise coleslaw.

If you’d love to make the dressing, I would suggest tasting as you go, adding salt, lime, and agave/honey until it becomes JUST too salty, sour, and sweet for you. It’ll then be perfect once you add the veggies 🙂

Recipe:

Salad
2 parts green or white cabbage
1 part purple cabbage
1 part tuscan kale
Thinly sliced carrots

Dressing
Avocado (1)
Lime juice (to taste, I used one whole lime)
Chives (30g, 1 bunch)
Parsley or cilantro (30g, half bunch)
Olive oil (54g, 1/4 cup)
Agave or honey (10 g, 1/2 tbsp)
Mayo (13g, 1 tbsp) – optional if you’re vegan or opposed to any mayo. I found it balances out the herbs a bit, but the difference is subtle.
Salt (to taste)
