Roast Chicken and Gravy in the Instant Pot (Paleo, Whole30, Gluten Free)

You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Want everybody to think you’ve been working away in the kitchen all day? Then make this chicken! Only you (and I) will know it really only took about 45 minutes begin to finish. Yes, the gravy too. When you begin with great quality, whole food ingredients, it doesn’t take a lot of time or fancy work to make something delicious. I hope you love this recipe as much as my family and I do.

Some of this recipe is just winging it, but the basics are below:
begin with 1 whole chicken (4-5 lbs.), clean it, pat it dry, remove the giblets
Mix together:
1 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Sage
1/2 tsp. Thyme
1/2 tsp. Paprika
Or 1 tsp. poultry seasoning substituted for the sage and thyme
3-4 big carrots
2-3 stalks celery
1 big onion
Season chicken with as much of the seasoning mix as you’d love – I probably used a total of 2
tsp.
Brown in a little oil
Remove chicken and add chopped veggies. Cook those for a few minutes.
Add about a cup of broth
Deglaze pan
Seal lid in put and cook on high pressure
Cook for 6 minutes per pound
I cooked mine for 26 minutes and it was perfect
