Secret Ingredient Instant Pot Broccoli Cheese Soup | Healthier * Meal Prep

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Broccoli cheese soup is one of my all-time favorite comfort food recipes. This Instant Pot broccoli cheese soup uses an unusual ingredient to make it thick and creamy, and the Instant Pot makes it so hands off to make- no stirring or watching the pot.

1 tablespoon olive oil
1 onion chopped
3 cloves garlic minced
2 cups stock chicken or vegetable
2 stalks celery sliced
4 cups broccoli florets 1-2 inches
1 white potato cut into 1/2 inch cubes
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
1 1/2 cups cheddar cheese shredded

00:46 – Select the ‘saute’ button on the Instant Pot. Add olive oil and onion to the stainless steel insert, and cook for 5-7 minutes, until soft and translucent.
00:54 – Add garlic to the pot and cook for 1 minute.
00:59 – Add the celery, broccoli, potato, salt and pepper and stock.
01:11 -put the lid on the Instant Pot, set the steam release handle to the ‘sealing’ position, and pressure cook on high pressure for 5 minutes.
01:21 – Allow the pot to naturally depressurize for 10 minutes after the cooking cycle completes. After 10 minutes, carefully set the steam release handle to the ‘venting’ position, to allow steam to release. Open the lid.
01:38 – Add milk to the Instant Pot, and use an immersion blender to blend until smooth.
01:53- Stir in the cheese until melted, and enjoy!
