You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
This vegan potato soup recipe is super simple to make. It’s a great dump and go into your instant pot for the simple dinner you need from time to time. Plus the cook time in the instant pot is only 20 minutes. This is the best vegan potato soup I’ve ever had. I think this version of the soup is better than panera bread by a long shot. But that’s my opinion on this simple potato soup.

Now for the Recipe!!
Ingredients
4 or 5 Golden Potatoes
2 Carrots
1 Small White Onion
4 or 5 Garlic Cloves
2 Ribs of Celery (Optional)
2 Bay Leaves
1 Tbsp of Thyme
1 Tsp of Ground Nutmeg
1 Tbsp Vegan Butter
2 Tbsp of Cornstarch
4 Cups of Vegetable Broth
1 Cup Coconut Milk Full Fat Unsweetened
Salt and pepper to taste
Crackers for dipping and toppings
Directions
Step 1
Peel Carrots and Potatoes
Step 2
chop up the Onion, Carrots, Celery if using, Potatoes, Garlic
Step 3
Melt butter in a pan and add carrots, onion, and celery if using. Cook until translucent. Then add the garlic til fragrant.
Step 4
Add cooked vegetables, potatoes, coconut milk, vegetable broth, thyme, salt, pepper, bay leaves, cornstarch, and ground nutmeg to a instant pot or a crock pot.
Step 5
If using a crock pot put on high for 5 to 6 hours,
If using an Instant pot you can either slow cook or pressure cook.
If slow cooking on high for 5 to 6 hours.
If pressure cooking cook on High for 20 minutes.
Step 6
Once done make sure to remove your Bay leaves.
Step 7
Pour some into a bowl and add some crumbled crackers and enjoy!!
