I wanted a lazy, failproof, no-fuss, FLEXIBLE meal – and this one is SO VERSATILE.

You can eat this as a plate, use it in burritos, and I even love to make a breakfast out of it by putting an egg and melting pepper jack cheese into a bowl of the rice. ๐ŸŒฏ๐ŸŒฎ๐Ÿณ๐Ÿš

๐Ÿ‘ฉโ€๐ŸณWRITTEN DIRECTIONS๐Ÿ‘ฉโ€๐Ÿณ

Ingredients:

– 1-1.5 cups basmati rice; MUST be white rice, medium or long grain. Soak for 15 minutes in cold water prior to cooking, then drain. Iโ€™ve heard bad results with Jasmine rice from a few reviewers, but I think they made a different mistake – which weโ€™ll acquire to later in the recipe.
– 14.5oz (411g) Rotel; chopped tomatoes with chilies
– 1-2lbs boneless, skinless chicken thighs
– ยฝ jar (~200g) salsa of your choice
– 1+ serving (85g) frozen corn
– 1+ servings (85g) frozen spinach
– 2+ tbsp cumin
– Salt (to taste); for chicken
– Pepper (to taste); for chicken
– Garlic powder (to taste); for chicken
– 2-3 cups of cooking liquid; water or stock/broth of your choosing, you want a 1:1 ratio of rice to liquid, and then a little extra to account for additional ingredients.

๐Ÿ‘ฉโ€๐Ÿณ STEP 1: Sear chicken for 3m, flip and sear the other side for 3m. (Season the tops with your salt, pepper, and garlic powder, set them aside when done searing.)

๐Ÿ‘ฉโ€๐Ÿณ STEP 2: begin LAYERING. Add in this order: pre-hydrated white rice (soaked for 15m), ยฝ of your seasonings, tin of Rotel (w/ water), other ยฝ of your seasonings, then the vegetables on top of the Rotel. (DON’T STIR.)

Add cooking liquid from ingredients list.

Finally, put your chicken thighs back in and top with salsa divided evenly between them. (Before we seal the deal, just eyeball your amount of liquid real fast to double check if itโ€™s excellent to go or if you think you need more. My ingredients recommendations are love sliders, I figure if you love less of something youโ€™ll put in more of others. If you put the MAXIMUM of rice, chicken, vegetables, etc. listed then you may want to go up to 2 cups of water.)

MANUAL PRESSURE (high if you have option) = 5 MINUTES

DONE!
