simple Seitan Meatballs in Instant Pot (vegan, oil free)

You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
If you want simple, tasty vegan meatballs that go with any sauce and hold their shape, these Seitan Meatballs in your Instant Pot or roasting tin are the answer!
Seitan Meatballs
2 carrots, grated
1 medium courgette, grated
200g firm tofu (or replace with beans if soy intollerant)
½ big steamed sweet potato
¼ cup flavourful paste (mix 1 tsp Dijon mustard, 1 tsp miso paste, 1 Tbsp soy sauce, ketchup or tomato paste for the rest)
1 Tbsp meat seasoning OR 11/2 tsp smoked paprika, 1 tsp onion powder, ½ garlic powder, ½ tsp cumin
¼ tsp fresh ground black pepper
1 cube of onion or mushroom stock (or use bullion powder or 1 tsp of salt instead)
1 small cooked beetroot OR 1 tsp beetroot juice powder (for the colour)
1 ½ cups vital wheat gluten (OR if you’re allergic to gluten, then try to mix in 4 Tbsp psyllium husk instead and bake the meatballs for 30 minutes at 190 degrees Celcius)
Pressure cook on high for 60 minutes or steam bake in the oven for 90 minutes.
