176 calories and 2 net carbs per mini cheesecake – recipe makes (on average) 8 mini cheesecakes


30 g unsalted butter (1 ounce)
50 g almond flour (1.8 ounces)

225 g full-fat cream cheese (7.9 ounces)
1 free range/ organic egg
Juice of a whole lemon
55 g erythritol – you can also use xylitol (sugar substitutes) (1.9 ounces)
1 tsp almond extract
0.5 tsp salt
Mixed berries (blueberries, blackberries, raspberries) to dress
