simple Vegan Corn Chowder Recipe in the Instant Pot – Chowder in an HOUR!

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

simple Vegan Corn Chowder Recipe in the Instant Pot. Have Chowder in an hour! I love chowder. Clams? No thank you. So corn it is. This super simple corn chowder is ready in the instant pot in under and hour. You can make this simple creamy vegan corn chowder in a slow cooker or on the stovetop too if you prefer. Yes, you can add potatoes if you love, I just tried to make this a lighter, less carb heavy meal so it’s mostly corn. The creaminess though, gotta have that! Makes a great side dish or even main course. Freeze the leftovers for super fast meals months down the road!

3 Ribs Celery chopped
1/2 big Sweet Onion (optional)
1 Bell Pepper chopped (or 3 Mini Bells)
2 Carrots chopped
4 Cups Spinach (or Greens of Choice)
1 Cup Cashews:
2 Cups Water
2 Cans Cream Corn
2 Cans Corn
2 Cups Veggie Stock
1/2 Teaspoon Black Pepper
1 1/2 Tablespoon Thyme
1 1/2 Tablespoon Salt Free Seasoning:
1/4 Cup Nutritional Yeast:

WARNING! If you don’t let the base of your inner pot cool a bit after the saute then you might have some bits burn to the bottom after the pressure cook.
