Spinach Potato Taco Filling from the Instant Pot



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


Another Instant Pot Video “WOO WOO!” This recipe comes from the Forks Over Knives mobile app. Del Sroufe came up with it but I had to modify with the ingredients I had on hand. Still turned out excellent enough to please the menfolk in house.

HERE’S ALL IT TAKES

Spinach-Potato Taco Filling from the Instant Pot
Makes about 6 cups filling

2 big yukon gold potatoes, cut into small dice1 (8-ounce) package frozen spinach
1 medium onion, chopped
1/2 cup chopped chipotles tomatoes, plus 1/2 cup tomato juice from can
2 teaspoons garlic granules
2 teaspoons ground cumin

1/2 cup unsweetened, unflavored plant milk
3 tablespoons nutritional yeast
Sea salt and freshly ground black pepper
12 corn tortillas
1⁄2 cup chopped fresh cilantro
