Hey guys, Hope everyone’s doing well!! For those of you bored around the house, I have a 3 ingredient sponge cake recipe for you!! I came up with this recipe a few months ago when my oven broke and I realized I just cannot live without baking cakes! And Eating them too 😄 This sponge cake recipe can be done in either your ninja foodie, instant pot or a excellent aged fashioned oven. However you choose to bake it, it’s the most incredible sponge cake you will ever encounter! It’s texture is ready to soak up any kind of juicy, moist filling or frosting and is especially excellent for a tres leches cake! It’s so much fun to use a ninja Foodie, try this recipe out and you’ll be glad that you did!
Ingredients:
4 Eggs (room Temp.)
3/4 cup Sugar
1 tsp. Vanilla or Lemon Zest
1 cup + 1 Tbs. Cake Flour
Directions:
Add the room temperature eggs into a bowl along with the sugar and vanilla and whip it on medium speed for 20 minutes. The eggs should be quadrupled in volume, have a glossy texture that’s white in color. Sift in the cake flour and gently fold it in, being careful not to over mix and deflate the batter. Add the prepared batter to the ninja foodie and after turning it on, put it on the bake setting. Set the temperature to 350 and the time for 40 minutes. Turn it on and wait for the time to be up. Once the time is ready, open the lid and put a spoon to prop it open. Allow the cake to slowly cool down for 10 minutes. Remove the cake thereafter and flip it over onto a cooling rack to further cool. Wrap the cake in plastic and store it in the refrigerator for up to 3 days.
