Straight Up Bison Instant Pot Mexican Bison Machaca Tacos



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


Straight Up Bison Mexican Bison Machaca Tacos Recipe

Preparation Time: 5 minutes
Cook Time: 1 hour 45 minutes
Servings: 8–16

INGREDIENTS

2–3 lbs. 100% grass-fed Bison Chuck Roast (https://www.straightupbison.com/products/bison-chuck-roast)

FOR THE MARINATE

2 oranges (you can combine 2 oranges add 1 lime if you want)
1 teaspoon dried cilantro
½ teaspoon black pepper
½ teaspoon chili powder
1 teaspoon onion powder
1–2 garlic cloves, peeled and smashed, (you can replace it with 1 teaspoon of garlic powder if needed)
1 teaspoon paprika
1 teaspoon dried oregano

FOR THE INSTANT POT

1 cup of water
1 teaspoon dried cilantro
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon chili powder (add it only if you want to make it a little spicy)
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
1 tablespoon olive oil or avocado oil
1 cup mild salsa
Fresh corn or flour tortillas. (If you want to make your own tortillas please check out my recipe to make fresh corn tortillas.)
Fresh guacamole
Fresh pico de gallo ingredients
3 roma tomatoes, chopped in small squares
1 lime
½ cup of chopped fresh cilantro
½ jalapeño chopped (if you love spicy food, don’t add the jalapeño)
1 teaspoon of salt (I use Himalayan salt)
½ teaspoon of black pepper
½ teaspoon of paprika
½ teaspoon of dried oregano
COOKING WARE

Instant Pot
Glass container with a lid to marinate meat. If you don’t have any type of container, you can use any container you may have available.

COOKING INSTRUCTIONS

One day before you plan to cook, take your bison out of the freezer and put it inside your refrigerator. I recommend putting your bison on top of a plate in case the package leaks.

In a deep glass container, squeeze two oranges and sprinkle one teaspoon of oregano, black pepper, chili powder, onion powder, garlic, paprika, and oregano.

cut your bison in half or four pieces if it is too big; this will assist your bison cook evenly.

Add bison to your glass container. Turn the bison several times, so the juice gets to touch the entire bison. Cover your bison with the lid and put it back in the refrigerator for 1–2 hours.

put your bison with juice inside your Instant Pot. Add the water, salsa, and the remaining seasonings: cilantro, salt, black pepper, chili powder (only if you love it spicy), onion powder, paprika, and dried oregano. Use tongs to hold the bison and move it around, so all the seasonings acquire spread out and mixed more evenly.

Close the lid and make sure it’s locked. Select the pressure setting and cook it for 1 hour 30 minutes. Don’t open the lid once the time is up. Allow the instant pot to release the pressure and open it once it is safe. It usually will take 15–20 minutes for all pressure to release.

Open the lid, remove your bison, and you should be able to shred your meat easily using two forks. If your bison is still hard, cook it for another 20–30 minutes.

Once you have shredded all your bison, put it back in the instant pot with all the juice. If you have any leftovers, save your bison with the liquid.
