Recipe:
Sweet Potato Dahl:
Ingredients:
2 small onions
3 garlic cloves, minced
Red pepper flakes (optional, to taste)
3/4 tsp turmeric
3/4 tsp garam masala
30 oz low sodium vegetable broth
1 cup red lentils
2 small sweet potatoes
6 – 8 cups spinach
Instant Pot directions:
Add all ingredients except spinach to Instant Pot. Cook on high pressure for 10 minutes. Release pressure manually. Add spinach while Dahl is hot, it will wilt. Serve alone or over rice.
Non Instant Pot directions:
In big non-stick saucepan, add onions and garlic, sauté until onions are cooked through and clear in color. Add red pepper flakes, turmeric, garam masala, vegetable broth, and lentils. Bring to boil then add sweet potatoes and lower heat to simmer and let cook until lentils and sweet potatoes are tender. Once cooked through, add spinach and cook until spinach is wilted.
