Thai Basil Chicken with Jasmine Rice- Instant Pot/ Stovetop

This flavorful Thai basil chicken is an simple adaptation of the popular stir-fry, Pad Krapow Gai. Sautéed chicken, peppers and onions cooked in a spicy, umami sauce, and finished with fresh basil leaves. Enjoy a restaurant-quality meal with pot-in-pot Jasmine rice, ready in 30 minutes in the Instant Pot or stove.

2 tablespoon avocado oil or olive oil
▢ 1 cup thinly sliced white onion or 2-3 shallots
▢ 1 cup red bell pepper thinly sliced
▢ 1 tablespoon minced garlic or 3 garlic cloves, finely chopped
▢ 2 Thai chili or bird’s eye chili de-seeded and thinly sliced
▢ 1 pound ground chicken
▢ 2 cups thai basil or holy basil divided
▢ ¼ cup water
▢ 2 tablespoon soy sauce
▢ 1 tablespoon fish sauce see notes for substitute
▢ 1 tablespoon rice vinegar
▢ 2 teaspoon palm sugar or brown sugar
▢ 2 teaspoon sambal oelek optional
▢ ¼ cup water
