These are the best pinto beans you’ll ever eat, infused with smoky bacon, onion and garlic, they’re begging for some cheese and red chile.
You’ll need:
3 cups of sorted pinto beans
2 thick slices of quality bacon
1 head of garlic (you can substitute roasted garlic for fresh: https://youtu.be/d1QHlrx2N5o )
1 onion
Annnnd, some water. Seriously, that’s it.
This pinto bean recipe is a New Mexican staple I always look forward to eating whenever I go back for a visit. There is no need to soak the beans overnight if you’re using an Instant Pot or other pressure cooker. The heat and pressure turns the little fiber pods into a soft and flavorful meal.
