Two instant pot vegan lentil recipes : vegan bolognese & vegan curry | simple vegan meals | tofucado

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Well, well. Today’s recipes are all about lentils + my forever love for the instant pot. I make these two recipes almost every week. I prepare them during the weekend and then I know I’m excellent to go for a couple of meals during the week. It’d be hard to choose which one I prefer the most between the lentil bolognese and the lentil curry… but i think last time I did them I had a slight preference for the lentil bolognese. It was really, really, delicious.

*Lentil bolognese
– Lentils
– Veggies: carrots, onion, garlic, mushrooms.
– Broth
– Olive oil
– Thyme, oregano, salt & pepper, bay leaves
– Tomato sauce
– Can of peeled tomatoes
– Balsamic vinegar
– Some pasta if you want

*Lentil curry
– Lentils
– Veggies: carrots, shallots, garlic.
– Coconut milk
– Some butter
– Chili powder, curry powder, smoked hot paprika, turmeric, chives.
– Tomato sauce
– Veggie broth
& some rice
