VEGAN INSTANT POT TOMATO SOUP RECIPE

1 Onion (chopped)
1/2 cup Carrots (chopped)
6 Garlic cloves (minced)
2 14.5 oz cans chopped tomatoes
2 tbs tomato paste
1/2 cup veggie broth
2 tbs coconut aminos (Or Tamari Or soy sauce)
1 tbs smoked paprika
3 tsp basil
1/2 tsp chili powder
1-2 tsp TJ onion salt
Salt + Pepper
Few shakes crushed red pepper
1/2-1 can coconut milk

SautΓ© the onion, carrots, and garlic with salt and pepper. Combine all ingredients (minus the coconnut milk) into instant pot and stir. Lock the lid and cook on high for 5 min. Let the pressure release naturally when finished. Open the lid and use an immersion blender to blend until smooth. If you don’t have an immersion blender, just let your soup cook a bit and transfer to a blender and blend until smooth and creamy! Now stir in the nut milk. Eat and enjoy!
