Vegan Thai Green Curry in Instant Pot



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Ingredients:
14 oz Tofu firm pressed and cut into cubes
19 oz Coconut Milk 1 big can
3 tbsp Green Curry paste
2 tbsp Oil
1 Bell Pepper cut into 1″ pieces
1 Carrot sliced
1 cup Broccoli cut into pieces
2 Scallions or Green Onions cut into 2″ pieces
1 tsp Sugar
1 tbsp Lemon juice
1/4 cup Roasted Cashews (optional)
Basil leaves to garnish
