You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Ingredients:

Onion-1/2, Medium sized, sliced
Green/Thai chili – 5, slit
Mint leaves, 1 bunch
Salt- As per taste
Curd/Yogurt- 4 tablespoons (unflavored Dannon yogurt works fine or you can make yogurt: https://youtu.be/BYGp3h491d4)
Oil – 4 tablespoons

Beans-1/2 cup
Potato – 1/2 cup
Carrot – 1
Cauliflower – 1 cup

Directions:

1 Turn on IP and switch to Sauté mode.
2 Add oil and once oil is hot, add garam masala spices. Saute well.
3 Next throw in the mint leaves and mix well.
4 Add the onions to the base, and sauté till they begin to caramelize
5 Next add ginger garlic paste and mix and saute well
6 Next add the vegetables; add cauliflower first and let it cook.Then add carrots, potatoes and beans. Saute them well
7 Next add the masalas; red chili powder, garam masala powder, cumin powder, cumin powder and salt.
8 Next add the yogurt into the base mix and mix well.
9 Next add the 3 cup of rice and add 4 cups of water
10 Switch to Manual mode, adjust the time to 6 mins, and make sure the whistle is in “Sealing” mode.
11 do a QR and make sure the safety valve has dropped, before opening the lid.

Notes:
1.Serve hot, along side “raita” and “mirchi ka salan”.
2.Serves 4 adults.

Vegetable Biryani is an ironic dish. Biryani, right from its inception was meant to be served with meat(of either chicken or goat).
Yet, the vast majority of Indians are vegetarians. Even among those who eat meat, quite a few tend to consider meat to be ‘once-in-a-week’ kind of dish.
So perhaps vegetable biryani was born from the natural human need to include all cultures and religions.
