You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

In today’s video I am going to be sharing a whole30 approved Zuppa Toscana. I cooked up this recipe using my Instant Pot. This recipe is healthy and packed with tons of flavor. I love to make a big pot of this and eat off it for several days.

INSTANT POT ZUPPA TOSCANA:
-1 pound Italian sausage
-1/2 teaspoons crushed red pepper flakes
7 small red potatoes, chopped into bite-sized pieces
1 medium yellow onion chopped
4 cloves of garlic minced
6 cups chicken stock
5 cups of chopped up kale
1/2 can of coconut milk
Salt and pepper to taste
garlic powder to taste
*optional: bacon or turkey bacon, and fresh parsley

INSTANT POT INSTRUCTIONS
-Press the ‘Saute’ button, and add the olive oil. When the pot is hot, add the ground sausage and brown it until no longer pink, about 3 minutes.

-Add onion and garlic and saute for another 3 minutes. Add vegetable stock , red potatoes, and seasonings. push potatoes into liquid.

-Lock the lid and turn the valve to ‘Sealing’. Press the ‘Manual’ or ‘Pressure Cook’ button and adjust for 10 minutes, pressure set to ‘High’. When the cook time is over, turn off the Instant Pot by pressing the ‘Turn Off’ button. Carefully fast release the pressure turning the valve to releasing.
-Once the steam is completely gone and the metal pin on the lid drops, carefully open the lid. Serve in soup bowls and top with bacon and chopped up parsley for some excellent presentation 🙂
